Ray’s Chapel Holds Spirit Night

Ray’s Chapel Baptist Church recently kicked off the new school year with a Spirit Night.
The students celebrated with music, food, fellowship, games and worship. Students were encouraged to wear their school colors to celebrate their return to class; schools represented included Northview, Ernest Ward, Tate and West Florida.

Tastes And Tales: Local Historic Group Releases Cookbook

The Jay Historical Society’s new cookbook “Tastes and Tales of the Great Pine Level” are now available for a $20 donation to the society.
“These recipes along with the accompanying photographs and stories, each reveal a bit of our collective heritage in Northwest Florida. Those that came before us may not have preheated their ovens to 350 degrees. Instead, they may have stirred a pot over an open fire or stoked big wood burning stoves to make the food hot. Still they cooked good food-simple maybe, but undeniably satisfying,” is how the historical society describes the 200 page cookbook.
“This book has been a labor of love for the committee working to make this a reality as well as all the community members who shared their recipes, photos and stories of family members both past and present generations. The money generated from the donations for this book, will help the society complete renovations of the future home of the museum and fund future book projects,” said Jane Hayes of the Jay Historical Society.
Cookbooks are available at Jay Pharmacy, Scott’s Furniture/Outdoors, DuraMed, Iron Gate Flowers and Gifts, United Bank, Town of Jay or the Santa Rosa Teachers Credit Union.

Birth: Chase Weston Gilmore

Benjamin and Rachel Gilmore along with big sister Savannah welcome with joy the birth of Chase Weston Gilmore. Chase was born on Wednesday, June 1, 2011, at Sacred Heart Hospital of Pensacola at 12:10 p.m. Chase weighed 8 pounds 13 ounces and was 21.75 inches long.
Chase is the grandson of Glen and Jean Wiggins of Walnut Hill and Elton and Missy Gilmore of McDavid. He is the great grandson of Pattie Stone and the late George Stone, Ouida Wiggins and the late Billy Wiggins, and Mattie Lou Sheffield.

Bursting with flavor, these seasonal favorite salads will be a new summertime favorite. Recipes for Mediterranean Salad with Feta and Watermelon, and Citrus-Ginger Grilled Steak Salad with Kiwifruit are below.
Mediterranean Salad with Feta and Watermelon
Ingredients
- 1 package Fresh Express 5-Lettuce Mix
- 4 to 5 cups cubed watermelon, from one small seedless melon
- 1/4 medium onion, sliced 1/4 inch thick
- 6 small radishes, trimmed and thinly sliced
- 12 pitted ripe, dry-cured olives, such as kalamata
- 1 1/4 cups (5 ounces) feta cheese crumbles
- Honey Garlic Vinaigrette (recipe below)
Preparation
- Place lettuce, melon, onion, radishes and olives in large salad bowl; drizzle with vinaigrette and toss gently but thoroughly. Portion salad onto six salad plates; top each salad with feta.
- Honey Garlic Vinaigrette: In medium jar with tight-fitting lid place 1/2 cup olive oil, 3 tablespoons honey, 1 tablespoon lemon juice, 1 teaspoon white balsamic vinegar, 1 minced garlic clove, 1 minced shallot, 2 tablespoons chopped parsley, 1 teaspoon salt and 1 teaspoon freshly ground black pepper; secure lid and shake jar well to blend.

Ingredients
- 1 package Fresh Express Fancy Greens
- 1/2 cucumber, peeled and diced
- 1/2 red bell pepper, seeded and diced
- 2 ripe kiwifruit, peeled and sliced
- 1 boneless strip steak, marinated in Citrus-Ginger Marinade, grilled
- Ginger Vinaigrette (recipe below)
Preparation
- Place greens, cucumber, bell pepper and kiwifruit in large shallow bowl. Drizzle Ginger Vinaigrette over and toss gently. Divide salad among four dinner plates; arrange sliced steak atop each salad and serve immediately.
- Ginger Vinaigrette: In medium jar with tight fitting lid place 5 tablespoons olive oil, 1 teaspoon grated fresh ginger root, 1 tablespoon white wine vinegar, 1 tablespoon orange juice, 1 teaspoon honey, 1/4 teaspoon salt and pinch of black pepper; secure lid and shake jar well to blend.

Citrus-Ginger Marinade
Ingredients
- 2/3 cup fresh orange juice
- Grated zest of one orange
- 2 tablespoons freshly grated ginger root
- 2 tablespoons soy sauce
- 2 tablespoons balsamic vinegar
- 1 teaspoon dry mustard
- 1 tablespoon coarsely grated black pepper
- 1/4 cup vegetable or peanut oil
Preparation
- In small bowl whisk together orange juice, zest, grated ginger, soy sauce, vinegar, mustard and pepper. Slowly add oil, whisking to blend well. Use immediately to marinate steak before grilling:
- Place one strip steak in large self-sealing bag, pour marinade over and refrigerate for 6 to 8 hours, or overnight.
- Remove steak from marinade, pat dry with paper towels and grill over direct heat to desired doneness.
- Allow steak to rest 5 minutes before slicing thinly to arrange atop salad.
Serves
Makes about 1 1/3 cups, enough for 1 pound of strip steak, or other beef loin steak

Registration Event Scheduled For Danceworks

Registration is underway for Heather Leonard’s Danceworks, and a registration event will be held Tuesday in Byrneville.
The registration will be from 6-8 p.m. Tuesday at the Byrneville Community Center. Or students can register by mail; click here for a form.
Ballet, tap and jazz classes will be taught by Heather Leonard beginning September 6 to girls ages 3 and up, including a class for 15 and up. Leonard has taught dance to hundreds of girls from North Escambia and surrounding areas. She is also the teacher for the Northview High School Dance Team.

Driskells Celebrate 50th

Gene and Liley (Jernigan) Driskell recently celebrated their 50th wedding anniversary with dinner and cake with family. Their family surprised them with a cruise to Mexico.
The Driskell’s were married on August 4, 1961, in Flomaton. During their life together they have enjoyed taking motorcycle trips alone and with friends. They also enjoyed having a houseboat on the Alabama river.
Gene was a meat cutter. Liley was a sewing machine operator at Vanity Fair. In 1976, they opened Driskell’s Grocery in Byrneville. They retired after 32 years of operating the store.
They are the proud parents of Lynette Brock and husband Kevin of Pace, and Allen Driskell and wife Michelle of Byrneville. They have three grandchildren, Jessica Johnson and husband Jeremy, Drake Allen Driskell, and Maddie Mae Driskell. The also have one great grandchild, Kayla Nicole Johnson.
Gene and Liley’s Parents were Allen and Lena (Emmons) Driskell and Lawrence and Nettie (Blanton) Jernigan.
Back To School: Meet The Teacher

Bratt Elementary School students had an opportunity to meet their teacher and drop off supplies Friday morning. School will begin bright and early Monday morning, August 22.

Photo Gallery: Thousands Attend Blue Angel Air Show

Thousands of people turned out for a Blue Angels practice Wednesday morning in Pensacola, including many North Escambia area residents.
As always, the Blues wowed the crowd at the Pensacola Naval Air Station with their show. Blue Angel practice shows are held on select dates at the National Naval Aviation Museum and are free to the public. Most of the Wednesday practices are followed by an autograph session in the museum.

The Blue Angels Homecoming Air Show will be November 11 and 12 at Pensacola NAS.
