Im gonna try this as well…the creamyness in the center looks really good. How can you mess up Yukon Gold’s they’re over the top good.
i bet a small can of drained mushrooms would be good in it also…hhmmm…

Use a bag of hashbrowns instead of the potatoes, also cream of chicken works well if you don’t like cream of mushroom.
